Dirk Conrad made a neat little 68020RC25 powered handmade machine, which
uses a 8bit directcolor display at ~640x480.  He uses the rams in a bank
interleave fashion, so that he can get a 50mhz ram bandwidth (so the cpu and
video system can share the same bus).  Its quite simple, and neat to see how
he built it all from discrete logic and a few R2R DAC for analogue video
out.
