You will see that you need that RAM for storing data to program the FlashRAM.
I like Anders' idea.

Good idea! To make it simpler, let just the colour change, let's say, twice a second. The moment the programming has finished, the text will reappear on the screen. Just inform the user on forehand that the whole proce can take about xx seconds (including a safety marge) and IMHO no normal user will push the reset button too quickly.
But the moment the colour stops changing and no text appears on the screen, then one can assume there is someting very wrong.  

The whole is easier to program and PAL/NTSC independant IMHO.
