Well there are myriads of interfaces for other ports (tape / iec / cartridge)

Bidirectional stuff with tape port, here are two projects,

Yes, microcontroller can detect where the c64 scans the keyboard
actually. It can read port A (Joy port 2) and watch for Kernal
changing keyboard matrix columns.

If data statements can be written the amount of basic program for the
user to enter just turns to 30-40 keypresses.

But then the user interface would be ugly,

1- Push some button on the adapter connected to joystick ports
2- Have it type data statements
3- Type additional basic line to enter program
4- Run it
