Sniping solves two problems: 1. possible reaction from other bidders, driving the price high. and 2. tames gambling instincts, which virtually everyone has. Using sniping I don't "keep missing out" because if the item goes away, it means either I underestimated its market value or someone wanted it so badly that I'd have to pay more than I am willing to in order to get it.
