That sounds like a cool project.
Why disconnect the screen ram or even the 6545 at all? Leave them connected outputting a regular signal. Install your module on the expansion bus and monitor writes to $8xxx mirroring them in the module's memory. Monitor writes to $E8xx for the CRTC controller registers (screen parameters) and the VIA for character rom selection. Generate a display completely independent of the PET video. This would be similar to how the Turbo Chameleon works on the C64.
I have a Nexys2 board if you need someone to test ;-)

I was also thinking to disable the chip select on the screen ram
and install a small board with a craignell or a godil reinplementing the 
screen..
I already made a vhdl to produce a screen similar to a commodore screen
producing a signal for vga  (actually run on a nexys2)

it is probably also possible to do something similar with a propeller...
